Red, White and Blue Parfaits
Show your patriotic spirit with these Red, White and Blue Parfaits. They are so easy to make and are a pretty addition to your get togethers. Creamy and decadent with bright and juicy summer berries!

- 1 cup vanilla wafers
- 4 oz mascarpone cheese
- 4 oz cream cheese
- 1/2 cup confectioners sugar
- 1/2 cup heavy whipping cream
- 1/2 tsp pure vanilla extract
- 6-8 strawberries large
- 10-12 raspberries
- 1/2 cup blueberries
In a small food processor, add vanilla wafers and pulse until finely chopped. Set aside.
Wash and dry strawberries, blueberries and raspberries. Cut strawberries into pieces. Set aside.
Using a hand mixer beat cream cheese. Add mascarpone and beat until smooth.
Add confectioners sugar, pure vanilla extract and heavy whipping cream, a little at a time, and beat until light and fluffy.
Use a spoon and drop mascarpone/cream cheese topping on the bottom of the mason jars. OR you can fill a piping bag and pipe in the topping. This is the method I used in this recipe.
Add 1-2 tablespoons of crushed vanilla wafers over topping. Drop in strawberries.
Add another layer of topping, add crushed vanilla wafers and blueberries for the next layer.
Lastly, add another layer of topping. Drop in raspberries.
Refrigerate, serve and enjoy!
