Line a 9x13 inch pan with non-stick aluminum foil. Place foil over the edges of the pan for easy removal.
Use a microplane or zester and zest 4-5 oranges. Set aside. Cut the oranges in half and squeeze out 1 cup of juice. Set aside.
Using a small stove top pan, melt the butter.
In a mini-food processor, grind vanilla wafers until fine.
Mix the butter, crushed vanilla wafers and sugar together. Press onto the bottom of the pan. Pack in tightly.
Place pan in the freezer.
In a large mixing bowl, beat cream cheese and sugar. Pour in sweetened condensed milk and beat until creamy.
Add fresh squeezed orange juice and zest and beat until combined.
In a separate mixing bowl, preferably cold, beat heavy whipping cream with a hand mixer. Once stiff peaks form, add confectioners' sugar and beat until combined.
Using a spatula, fold the whipped cream into the orange mixture until no lumps are visable.
Remove crust from freezer and pour mixture over the crust.
Return to the freezer and freeze for at least 3-4 hours.
Once your are ready to serve, carefully grip the outer edges of the foil and pull the bars out of the pan. Fold down the foil edges.
Use a warm knife to cut into bars. Wash with warm water between cuts.
Top with whipped cream and serve.
