Apple Cinnamon Bread with Streusel Topping

Ingredients
  

Apple Cinnamon Bread

  • 2 cups flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 cup butter
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 2 eggs
  • 1 1/2 tsp pure vanilla extract
  • 1/2 cup milk
  • 2 cups apples grated

Streusel Topping

  • 1 1/2 tsp ground cinnamon
  • 1/4 cup butter
  • 1/3 cup flour
  • 2 tbsp packed light brown sugar
  • 2 tbsp granulated sugar

Vanilla Glaze

  • 1/2 cup powdered sugar
  • 1 tbsp butter melted
  • 1/2 tsp pure vanilla extract
  • 1 tbsp milk

Instructions
 

  • Preheat oven to 350 degrees.
  • Spray a bread pan with baking spray with flour and set aside.
  • In a large mixing bowl, whisk together flour, baking powder, salt and cinnamon. Set aside.
  • Using a stand mixer with a paddle attachment or a hand mixer, beat the butter.
  • Add sugars and beat until light and fluffy.
  • Drop in eggs, pure vanilla extract and milk. Beat until combined.
  • Add in dry ingredients and beat until combined.
  • Wash, peel and grate apples. Fold into batter.
  • Spread batter evenly into the prepared pan. 

Streusel Topping

  • Combine cinnamon, butter, flour, light brown sugar and granulated sugar. Cut in butter using a pastry cutter or fork until it resembles little crumbles.
  • Spread over batter.
  • Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean. Topping should be golden brown.
  • Let cool in pan for about 10 minutes. Remove from pan and transfer to a wire rack and let cool completely.

Vanilla Glaze-Optional

  • In a small mixing bowl, add melted butter, powdered sugar, milk and pure vanilla extract and mix until smooth.
  • Drizzle over the top of the bread.
  • Slice, serve and enjoy!

Storing/Freezing

  • To store, wrap with foil for up to 3 days.
  • To freeze, wrap in heavy duty aluminum foil and place in a freezer bag for up to 3 months.
