Easy Cheesy Chicken Divan

Easy Cheesy Chicken Divan is a simple casserole that the whole family will love! Get your protein, dairy, and vegetable all in one dish!

Equipment

  • 2 large stock pots
  • 9x13 casserole dish
  • Large saute pan

Ingredients
  

  • 2.5-3 lbs bone in chicken breasts
  • 1 1/2 cups extra sharp cheddar cheese Cracker Barrel, about 1/2 stick
  • 1 tbsp lemon juice
  • 2 cans cream of chicken soup
  • 2 large bunches of broccoli or 2 packages of frozen broccoli florets
  • 1 bag Pepperidge Farm Country Style Stuffing Mix 1/2 bag, 6oz
  • 2 tbsp butter
  • 1 cup water or chicken broth

Instructions
 

  • Boil chicken in a large stock pot for 30-45 minutes, or until the chicken is falling off the bone.
  • Set aside to cool. Once cooled, cut chicken into pieces.
  • Spray casserole dish with baking spray.
  • Fill another large stock pot with water, bring water to a boil. Add broccoli and cook for about 5-6 minutes. Drain well. Broccoli can be slightly al dente.
  • In a large sauté pan, combine cheddar cheese, lemon juice and chicken soup and whisk until the cheese is melted.
  • Add water and butter to a medium sized pan. Bring to a boil, add stuffing, shut off heat and let sit for 5 minutes.
  • Layer you casserole dish:
    First layer: Broccoli
    Second layer: Chicken
    Third layer: Cheese sauce
    Fourth layer: Stuffing mix
  • Bake in a preheated oven set to 350 degrees for 30 minutes or until hot and bubbly.
  • Serve and enjoy!
  • Cover leftovers with plastic wrap and place in the refrigerator for up to 3 days.

Notes

To save time, buy a rotisserie chicken and cut into pieces.  You can also use frozen broccoli florets if so desired.  Make my Homemade Chicken Soup as you are halfway there!
