Easy Zucchini Bread

This easy zucchini bread is a great way to incorporate fresh zucchini into your recipes. Super easy, moist and delicious! It's also a great way to sneak some veggies into your kids diet!

Ingredients
  

  • 3 eggs
  • 1 cup vegetable oil
  • 3 tsp pure vanilla extract
  • 2 cups granulated sugar
  • 3 cups flour
  • 1 tsp salt
  • 1/2 tsp baking powder
  • 1 tsp baking soda
  • 3 tsp cinnamon
  • 2 cups grated zucchini

Instructions
 

  • Preheat oven to 350 degrees.
  • Grease and flour two bread pans.
  • Grate 2-3 zucchini (2 cups) keep the skin on.
  • Using a hand mixer, beat eggs, vanilla and oil.
  • Add in sugar slowly and beat well.
  • Mix dry ingredients together (flour, salt, baking soda, baking powder, cinnamon), add to mixing bowl and beat until combined (this will be very thick).
  • Stir in grated zucchini.
  • Pour 1/2 mixture in one pan filling 1/2 way full (repeat for the other pan).
    Optional: For chocolate chip zucchini bread-Add 1 cup of chocolate chips for the second pan. Sprinkle another 1/4-1/2 cup of chocolate chips on top.
  • Bake for 40-60 minutes or until a toothpick inserted directly in the center comes out clean.
