Easy Zucchini Bread
This easy zucchini bread is a great way to incorporate fresh zucchini into your recipes. Super easy, moist and delicious! It's also a great way to sneak some veggies into your kids diet!

- 3 eggs
- 1 cup vegetable oil
- 3 tsp pure vanilla extract
- 2 cups granulated sugar
- 3 cups flour
- 1 tsp salt
- 1/2 tsp baking powder
- 1 tsp baking soda
- 3 tsp cinnamon
- 2 cups grated zucchini
Preheat oven to 350 degrees.
Grease and flour two bread pans.
Grate 2-3 zucchini (2 cups) keep the skin on.
Using a hand mixer, beat eggs, vanilla and oil.
Add in sugar slowly and beat well.
Mix dry ingredients together (flour, salt, baking soda, baking powder, cinnamon), add to mixing bowl and beat until combined (this will be very thick).
Stir in grated zucchini.
Pour 1/2 mixture in one pan filling 1/2 way full (repeat for the other pan).Optional: For chocolate chip zucchini bread-Add 1 cup of chocolate chips for the second pan. Sprinkle another 1/4-1/2 cup of chocolate chips on top. Bake for 40-60 minutes or until a toothpick inserted directly in the center comes out clean.
