These Corned Beef Reuben Egg Rolls take all the messy goodness of a reuben sandwich and roll it up in a neat little egg roll. All the cheesy goodness of reuben in a crunchy egg roll.
Combine the drained sauerkraut, chopped corned beef and half the shredded swiss cheese in a large bowl and mix well.
On a clean work surface, place an egg roll wrapper positioned to look like a diamond.
Add 3 tbsp of the filling in the middle of the wrapper, add an additional tbsp of the shredded cheese.
Roll the bottom corner up to cover the filling.
Fold in the left and right sides.
Dip your finger in the water and run it along the top triangle of the wrapper.
Continue to roll the egg roll upwards, then press the top corner down too seal.
Place egg roll on a tray and repeat until all the filling is used up. About 20 egg rolls.
Preheat the air fryer to 370 and cooking time to 10 minutes.
Once air fryer is hot, place 6 egg rolls in the basket (depending on air fryer size) making sure not to crowd.
Spray egg rolls with olive oil spray.
Cook for 10 minutes, turning half way through. All air fryers cook differently, so you may need to adjust the cooking time based on your machine and cook preference.
Once done, remove egg rolls from the tray and serve immediately with a side of Russian or Thousand Island dressing for dipping.
