Apple Pie Enchiladas
Apple Pie Enchiladas are an easy version of a hot apple pie. Cinnamon, apples, sugars and lemon juice stuffed and baked in a tortilla drizzled with caramel sauce. Yum!

Apple Pie Filling
- 6 soft flour tortillas
- 4 Granny Smith Apples
- 2 tsp lemon juice
- 1 tsp cinnamon
- 1 tbsp flour
- pinch of salt
- 1/4 cup granulated sugar
- 1/4 cup dark brown sugar packed
Sauce
- 1/2 cup butter
- 1/2 cup water
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
Apple Pie Filling
Wash, peel and dice apples into small cubes.
In a mixing bowl, combine apples, lemon juice, cinnamon, flour, salt, granulated sugar and dark brown sugar. Let stand for 5 minutes.
Microwave flour tortillas for 20-30 seconds.
Place 1/2 cup of apple filling slightly off center of each tortilla. Tuck in edges and roll up each tortilla tightly. Place seam side down in the baking dish.
Sauce
In a sauce pan over medium heat, stir together butter, water, brown sugar and granulated sugar.
Bring to a boil, stirring constantly, reduce heat and simmer for 5 minutes. Pour sauce over enchiladas and let stand for 30 minutes.
Bake for 45 minutes or until golden brown.
Serve warm and drizzle caramel sauce over the top. Add a scoop of vanilla ice cream if desired.
