Reuben Dip

f you love Reubens, then you are going to love this Reuben Dip! This hot, delicious dip can be whipped up in minutes then baked and served!

Ingredients
  

  • 8 oz cream cheese softened
  • 1/2 cup sour cream
  • 1/2 cup Thousand Island Dressing
  • 1/2 lb. deli corned beef chopped or shredded
  • 1 1/2 cups shredded Swiss cheese (reserve 1/2 cup for the top)
  • 1 cup sauerkraut

Instructions
 

  • Preheat oven to 350 degrees.
  • Chop corned beef into 1 inch strips or shred. Set aside.
  • Drain sauerkraut well, squeeze out excess water. Set aside.
  • Using a hand mixer, beat cream cheese until smooth and creamy.
  • Slowly add in sour cream and beat well.
  • Add Thousand Island Dressing, Swiss cheese and sauerkraut and mix until blended.
  • Stir in corned beef.
  • Spread into a baking dish.
  • Bake for 30 minutes, add 1/2 cup of the remaining Swiss Cheese to the top and bake until cheese is melted and dip is hot and bubbling.
  • Serve immediately with a variety of dippers.
