Classic Chocolate Cupcakes
These classic chocolate cupcakes are rich, decadent and super moist! Add on chocolate buttercream frosting and this cupcake is sheer perfection!

- 1/4 cup salted butter
- 4 oz unsweetened baking chocolate melted
- 2 eggs
- 2 cups granulated sugar
- 1 1/4 tsp pure vanilla extract
- 3/4 cup sour cream
- 1 cup water
- 2 cups all-purpose flour
- 1 tsp baking soda
Preheat oven to 350 degrees.
In a pan over low heat, melt the butter and baking chocolate, stir until smooth. Cool for 5 minutes.
Using a stand mixer, beat the eggs and granulated sugar.
Add the vanilla, sour cream and water and beat until combined.
Add flour and baking soda and beat.
Add in the chocolate mixture and beat until smooth. (Make sure this is your last step! I have beaten the chocolate mixture out of order a few times and it completely messed up this recipe!)
Fill cupcake liners ½ way full.
Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
Let sit in cupcake tin for 5 minutes. Then move to a wire rack and cool completely.
Frost with chocolate buttercream frosting.
Serve and enjoy!
Store in an airtight container, in the refrigerator for 3-5 days.
