Mini Pecan Pie Bites

Equipment

  • Stand mixer with paddle attachment or hand mixer
  • Mixing bowls
  • mini muffin pan(s)

Ingredients
  

  • baking spray with flour
  • 1/4 cup granulated sugar
  • 1/4 cup dark brown sugar
  • 1/2 cup butter softened, 1 stick
  • 1 tsp pure vanilla extract
  • 1 egg
  • 1 cup + 2 tbsp flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt

For the filling

  • 1 1/4 cups pecans finely chopped
  • 1/2 cup dark brown sugar packed
  • 3 tbsp heavy whipping cream
  • 1 1/2 tsp pure vanilla extract

Instructions
 

  • Preheat oven to 350 degrees.
  • Spray mini muffin pan with baking spray with flour. Set aside.
  • Using a stand mixer with a paddle attachment or a hand mixer, beat granulated sugar, dark brown sugar, butter and egg until light and creamy. Scrape down the bowl as needed.
  • Add flour, baking powder and salt and beat until combined.
  • Shape dough into 1-inch balls and place into prepared mini muffin cups. Using your thumb, press dough down and up the sides of each cup.
  • In a mixing bowl, combine filling ingredients: dark brown sugar, chopped pecans, heavy whipping cream and pure vanilla extract. Spoon roughly 1/2 tsp. into each prepared cup.
  • Bake for 15-18 minutes or until the edges are golden brown. Let cool in the pan for 10 minutes. Run a knife around the edge of each cup and carefully remove each pecan bite. Place on a wire rack and cool.
  • Serve with or without whipped cream.
