Blueberry Coffee Cake

Equipment

  • stand mixer with paddle attachment
  • 8x8 pan

Ingredients
  

  • 1 cup sugar
  • 2 eggs
  • 1/2 cup butter softened
  • 1 1/2 cup flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/3 cup milk
  • 1 tsp vanilla
  • 2 cups blueberries

Instructions
 

  • Preheat oven to 350 degrees.
  • Spray an 8x8 baking pan with baking spray with flour.
  • In a stand mixer with the paddle attachment, beat the eggs and sugar until thick and creamy.
  • Add the softened butter and mix well.
  • Mix dry ingredients (flour, baking powder and salt) together, add to mixing bowl.
  • Combine wet ingredients (milk and vanilla), add slowly to mixing bowl and beat well. Mixture should be thick and smooth.
  • Fold in blueberries. Pour into prepared pan.
  • Sprinkle sugar on top.
  • Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean. Cake should be golden brown.
  • Cool, cut, serve and enjoy!
