Blueberry Coffee Cake
Loaded with big blueberries, this Blueberry Coffee Cake is a super moist, melt in your mouth, piece of heaven. Simple to make and even easier to devour!

1 cup sugar 2 eggs 1/2 cup butter softened 1 1/2 cup flour 1 tsp baking powder 1/4 tsp salt 1/3 cup milk 1 tsp vanilla 2 cups blueberries
Preheat oven to 350 degrees.
Spray an 8x8 baking pan with baking spray with flour.
In a stand mixer with the paddle attachment, beat the eggs and sugar until thick and creamy.
Add the softened butter and mix well.
Mix dry ingredients (flour, baking powder and salt) together, add to mixing bowl.
Combine wet ingredients (milk and vanilla), add slowly to mixing bowl and beat well. Mixture should be thick and smooth.
Fold in blueberries. Pour into prepared pan.
Sprinkle sugar on top.
Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean. Cake should be golden brown.
Cool, cut, serve and enjoy!
