Banana Cupcakes with Coconut Cream Cheese Frosting

Ingredients
  

  • 1/2 cup butter
  • 1 cup sugar
  • 1 1/2 tsp pure vanilla extract
  • 1 cup sour cream
  • 2 cups all purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 1/2 cups bananas mashed

Instructions
 

  • Preheat oven to 350 degrees.
  • Prepare cupcake pans with liners.
  • Using a stand mixer with the paddle attachment or a hand mixer, beat the butter and sugar until light and fluffy.
  • Add eggs, one at a time, beating after each.
  • Add pure vanilla extract and sour cream. Beat until combined.
  • Mix the dry ingredients together, add to mixing bowl and beat until combined.
  • Stir in the mashed bananas.
  • Spoon batter into prepared cupcake pan, filling 3/4 way full.
  • Bake for 17-20 minutes or until a toothpick inserted in the center comes out clean.
  • Cool completey before frosting.
