Preheat oven to 350 degrees.
In a stand mixer, using a paddle attachment cream the butter, vegetable shortening, granulated sugar, and brown sugar until creamy.
Add pure vanilla extract and beat until combined.
Drop in eggs, one at a time, beating well after each.
Add peanut butter and mix until combined.
In a mixing bowl, combine flour, baking soda and salt.
Add these ingredients to the mixing bowl and beat unitl combined.
Stir in the chocolate chips.
Using a cookie scoop, drop cookies onto a baking sheet. Press in extra chocolate chips on the top.
Bake for 10-12 minutes or until the edges start to slightly brown to ensure a soft, chewy cookie.
Remove from oven. Let stand on the cookie sheet for 2 minutes. Transfer to a wire rack and cool.
