Easy Peanut Butter Chocolate Chip Cookies

Equipment

  • Baking sheet
  • Cookie scoop or teaspoon

Ingredients
  

  • 1/2 cup butter softened
  • 1/2 cup vegetable shortening
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar packed
  • 1 1/2 tsp pure vanilla extract
  • 2 eggs
  • 1 cup creamy peanut butter
  • 2 1/2 cups flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 1/2 cups semi-sweet chocolate chips 1/2 cup more for the tops

Instructions
 

  • Preheat oven to 350 degrees.
  • In a stand mixer, using a paddle attachment cream the butter, vegetable shortening, granulated sugar, and brown sugar until creamy.
  • Add pure vanilla extract and beat until combined.
  • Drop in eggs, one at a time, beating well after each.
  • Add peanut butter and mix until combined.
  • In a mixing bowl, combine flour, baking soda and salt.
  • Add these ingredients to the mixing bowl and beat unitl combined.
  • Stir in the chocolate chips.
  • Using a cookie scoop, drop cookies onto a baking sheet. Press in extra chocolate chips on the top.
  • Bake for 10-12 minutes or until the edges start to slightly brown to ensure a soft, chewy cookie.
  • Remove from oven. Let stand on the cookie sheet for 2 minutes. Transfer to a wire rack and cool.
  • Serve and enjoy!
