Simple Slow Cooker Pot Roast

Ingredients
  

  • 1 3-5 lb. chuck roast
  • 2-3 tbsp flour
  • fresh ground pepper and salt
  • 2-3 tbsp olive oil
  • 1 large onion peeled and halved
  • 6-8 carrots peeled and cut into 2-3 inch pieces
  • 6 medium white potatoes cubed
  • 3-4 celery cut into 2-3 inch pieces
  • 1 package french onion soup mix
  • 1 can cream of mushroom soup
  • 1/2 cup water
  • 1 cup beef broth
  • 1/3-1/2 cup corn starch for thickening

Instructions
 

  • Lightly flour, salt and pepper chuck roast.
  • In a large fry pan, add 2-3 tablespoons of olive oil over medium heat. Add the onions to the pan, browning them side down. Remove onions and set aside.
  • Place the chuck roast into the fry pan and sear it for about 1-2 minutes on all sides until it is a nice brown color. Remove the roast and place it into your slow cooker.
  • Use about a half cup of 1/2 cup of water to deglaze the pot. Use a wooden spoon to carefully scrape the bottom of the pan. Pour over the roast.
  • Add peeled potatoes, onion, carrots and celery to the slow cooker.
  • In a mixing bowl, mix french onion soup, cream of mushroom soup and 1/2 can of water. Pour over the roast and vegetables.
  • Add one cup of beef broth to the slow cooker. Add about 1/2 teaspoon of fresh ground pepper.
  • Cook on high for 5-6 hours or on low for 8-10 hours or until the roast and vegetables are tender. For the last hour, add corn starch, whisked together with a small amount of water, to thicken the gravy.
  • Serve and enjoy!
