I love to make this simple blueberry coffee cake on the weekends. There is nothing better than the delicious smell of sweet, coffee cake making its way through the house. It’s a great way to wake up my kids!
Just this morning, my three girls made their way down to the kitchen. My daughter Sammie was the first one to ask, “What are you making? It smells so good!” Like I said, this delicious, freshly baked coffee cake certainly lets everyone in the house know you are baking something delicious.
My sister-in-law brings this coffee cake down to the Cape every year and within a day it’s completely devoured! It’s moist, sweet, and filled with big blueberries. What’s not to like? So I had to get this recipe and share it with you. It is super easy to whip up and it won’t disappoint!

Blueberry Coffee Cake-Ingredients
Blueberries, flour, milk, butter, sugar, vanilla, salt, baking powder, eggs.
Instructions
Preheat oven to 350 degrees. In a stand mixer with the paddle attachment, beat the eggs and sugar until thick and creamy.
Add the softened butter and beat well.
Mix the dry ingredients (flour, baking powder and salt) together and add to the mixing bowl.
Combine wet ingredients (milk and vanilla), add slowly to mixing bowl and beat well.
Mixture should be thick and smooth.
Fold in blueberries. Pour into prepared pan.
Sprinkle sugar on top.
Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean. Cake should be golden brown.
Cool, cut, serve and enjoy!

- 2 eggs
- 1/2 cup butter softened
- 1 1/2 cup flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/3 cup milk
- 1 tsp vanilla
- 2 cups blueberries
