Easy Cheesy Chicken Divan is a simple casserole that the whole family will love! Get your protein, dairy, and vegetable all in one dish!
During my junior year, I lived in the townhouses right on campus. One of my roommates, Kate, used to make us chicken divan and I absolutely loved it! First, it was just so delicious! What was not to like? Chicken and broccoli, smothered in a creamy, cheesy sauce and topped off with stuffing? Amazing! Second, back then I couldn’t cook at all, so everything that was made from scratch tasted like a 5 star meal to me! Boy, I have come a long, long way! Believe me, “Anyone can cook,” and if you know Disney movies, this was Chef Gusteau’s famous saying. Don’t know who this is? He was the famous chef, from one of my kids favorite Disney movies, “Ratatouille”. You too can cook! Try this Easy Cheesy Chicken Divan and enjoy a meal the whole family will love!
Easy Cheesy Chicken Divan-Ingredients
- bone in chicken breasts
- extra sharp cheddar cheese
- lemon juice
- cream of chicken soup
- fresh broccoli
- butter
- Pepperidge Farm Country Style cubed stuffing mix
Instructions
- Boil chicken in a large stock pot for 30-45 minutes, or until the chicken is falling off the bone. (make my Homemade Chicken Soup, you’re half way there!)
- Set aside too cool. Once cooled, cut chicken into pieces.
- Spray casserole dish with baking spray.
- Fill another large stock pot with water, bring water to a boil. Add broccoli and cook for about 5-6 minutes. Drain well. Broccoli can be slightly al dente.
- In a large sauté pan, combine cheddar cheese, lemon juice and chicken soup and whisk until the cheese is melted.
- Add water and butter to a medium sized pan. Bring to a boil, add stuffing, shut off heat and let sit for 5 minutes. (My daughter loves stuffing and she said add it all! If you like stuffing too, then feel free to add the whole bag!)
- Layer you casserole dish:
- First layer: Broccoli
- Second layer: Chicken
- Third layer: Cheese sauce
- Fourth layer: Stuffing mix
- Bake in a preheated oven set to 350 degrees for 30 minutes or until hot and bubbly.
- Serve and enjoy!
- Cover leftovers with plastic wrap and place in the refrigerator for up to 3 days.
Baker’s Notes:
- To save time, buy a rotisserie chicken and cut into pieces.
- You can also use frozen broccoli florets if so desired.
