This easy strawberry shortcake combines warm biscuits, juicy strawberries, vanilla ice cream and whipped cream making this a favorite summer dessert!
Did you know that (today) June 14th is National Strawberry Shortcake day? Each year it’s celebrated on this day during the peak of strawberry season. This day also recognizes the coming of summer, which officially starts on June 21st. Strawberry season runs from April-June and throughout this time you will find the most ripe, juicy and delicious strawberries. Whether you pick them or they are in the grocery stores, you’ll find an abundance of them. Although I never need a reason to make strawberry shortcake, I am going to make it for dessert tonight.
Making biscuits are easy, but making them with the assistance of Bisquick is even easier. All you need to do is put the Bisquick in a mixing bowl, add milk, sugar, melted butter and mix. Bake for 10-12 minutes and done! Perfect and delicious warm biscuits for your shortcake.
I love ice cream and although the traditional strawberry shortcake omits ice cream, this one doesn’t. I think adding vanilla ice cream to this traditional dessert makes it even better! So if you are feeling adventurous then grab your ice cream and let’s get started!
Easy Strawberry Shortcake-Strawberry Instructions
- Wash strawberries and cut into slices, (4-5 cups)
- Fill the bowl half way with water (my family loves the juice!)
- Add 1/2 cup sugar and 1 teaspoon of balsamic vinegar (trust me, this makes the flavors really come out)
- Stir together and let sit in the refrigerator for at least 1-2 hours
Biscuit Instructions
- In a large mixing bowl, add Bisquick, milk, melted butter, sugar and mix together until combined
- Drop spoonfuls onto an ungreased baking sheet
- Bake at 350 degrees for 10-12 minutes
Assembly Instrcutions
- Cut biscuit horizontally and lay on bottom of the bowl
- Add one scoop of vanilla ice cream
- Spoon on juicy strawberries
- Add the top and spoon on more strawberries (don’t forget the juice; pour several spoonfuls over the top)
- Swirl on whipped cream

Ingredients
- 1 cup Bisquick
- 1 1/2 tbsp sugar
- 1 1/2 tbsp butter melted
- 1/4 cup milk
Instructions
- Preheat the oven to 350 degrees
- In a mixing bowl, mix together Bisquick, sugar, melted butter and milk
- Drop spoonfuls of batter onto an ungreased baking sheet
- Bake for 10-12 minutes
