This eye-catching, fresh cherry tart has all the right ingredients; fresh cherries, an easy creamy filling and a delicious almond crust that makes this a perfect summer dessert!
Summer is the perfect time to make fresh fruit desserts. The grocery stores are packed with fresh, colorful fruit that we don’t get to see too often during the winter. Fresh strawberries, blueberries, cherries, and raspberries are among several of the fruits that you will see in abundance in the summer months.
Cherries are one of the fruits that you never see in the winter months, especially if you live in the Northeast part of the country. So during summer, I love to load up on my share of cherries whenever I am at the grocery store.
Health Benefits of Cherries
In addition to being delicious, cherries have a lot of health benefits too!
High in nutrients
First and foremost, cherries are packed with nutrients (fiber, vitamins and minerals). In particular, cherries are rich in vitamin C and potassium. Vitamin C helps to boost your immune system and skin health while potassium is needed for muscle contraction, nerve function and blood pressure regulation. In addition, cherries are loaded with fiber that keeps your digestive track moving and regular.
Loaded with antioxidants and anti-inflammatories
Cherries are also packed with antioxidants and anti-inflammatories, due to their high concentration of plant compound. Antioxidants help reduce oxidative stress, which is linked to many chronic diseases and premature aging. Cherries also combat inflammation, fight cellular damage and promote overall health. In fact, polyphenol-rich diets (micronutrients that we get through plant based foods) may protect against heart disease, diabetes, decreased mental function and certain cancers.
Promotes exercise recovery and athletic performance
The high concentration of antioxidants and anti-inflammatories found in cherries also helps to reduce exercise induced muscle soreness. It is also linked to increased athletic performance.

Fresh Cherry Tart-Crust Ingredients
Butter, flour, almonds, orange juice, powdered sugar.
In a mini-food processor, grind the almonds and set aside.
Using a stand mixer with a paddle attachment, beat the butter until creamy.
Add almonds, flour, powdered sugar, and orange juice.
Beat until a soft dough forms.
Gather the dough into a disk and refrigerate for 30 minutes.
Take out refrigerated dough and press into tart pan.
Bake at 350 degrees for 15-20 minutes or until the edges start to turn golden brown.
Fresh Cherry Tart-Filling Ingredients
Cream cheese, almond extract, vanilla extract, sugar.
In a mixing bowl, beat the cream cheese and sugar until smooth.
Add the almond and vanilla extracts and beat until incorporated.
Add the filling to the cooked tart and spread to the outer edges.
Wash cherries and remove the stem. Place the cherry inside the pitter.
Press the down on the chopstick where the stem used to be. Keep pressing down until you feel the pit. Continue pressing until the pit goes though the bottom. Don’t have a pitter, then try these other techniques on how to pit cherries.
Once you have pitted all the cherries, arrange on top of the tart. Start on the outside and work your way into the middle of the tart.
Fresh Cherry Tart-Glaze
This step is optional. However, the glaze adds a nice sweetness and shine to the cherries.
In a stove top pan over medium heat, add water, vanilla extract and sugar. Stir until sugar is dissolved.
In a small bowl, add water to the corn starch and mix until smooth.
Add corn starch to the stove top pan and stir over medium-high heat until thick.
Brush glaze on top of the cherries, using a silicone brush.
Refrigerate for several hours. Sprinkle granulated or powdered sugar on top.
Cut serve and enjoy!

Equipment
- stand mixer with paddle attachment
- 10 inch tart pan
- Mini food processor (optional)
- cherry pitter (optional)
Ingredients
Tart Crust
- 1 1/2 sticks butter salted
- 1 1/2 cups flour
- 1/2 cup powdered sugar
- 1 tbsp orange juice
- 1/2 cup almonds chopped
Tart Filling
- 8 oz cream cheese
- 1/2 cup granulated sugar
- 1/2 tsp almond extract
- 1/2 tsp pure vanilla extract
Cherries for the top
- 4-5 cups cherries pitted
Fruit glaze
- 1/4 cup water
- 1/4 tsp pure vanilla extract
- 2 tbsp granulated sugar
- 1 tsp corn starch
- 1 tbsp water
Instructions
Tart Crust
- Preheat oven to 350 degrees.
- In a mini-food processor, grate the almonds until fine. Set aside.
- In a stand mixer with a paddle attachment, beat the butter until creamy.
- Add flour, powdered sugar, orange juice and almonds. Beat until a soft dough forms.
- Gather dough into a disk, wrap in wax paper and refrigerate for at least 30 minutes.
- Press refrigerated dough into the tart pan.
- Bake for 15-20 minutes or until the edges start to turn golden brown.
- Set aside to cool.
Tart Filling
- In a mixing bowl, beat the cream cheese and sugar until smooth. Add the almond and vanilla extracts and beat until incorporated.
- Spread fiiling to the outer edges of the cooked tart.
Cherry Topping
- Wash and pit cherries. Place the cherry inside the pitter.
- Press the down on the chopstick where the stem used to be. Keep pressing down until you feel the pit. Continue pressing until the pit goes though the bottom.

- Arrange on top of tart, start on the outside and work your way into the middle of the tart.
Fruit Glaze-Optional
- In a stove top pan over medium heat, add water, vanilla extract and sugar. Stir until sugar is dissolved.
- In a small bowl, add corn starch and water and mix until smooth.
- Add corn starch to the stove top pan and stir over medium-high heat until thick.
- Remove from heat and spread glaze over the cherries using a silicone brush.
- Refrigerate for several hours.
- Sprinkle granulated or powdered sugar on top.
- Cut, serve and enjoy!
