For the mango salsa, you will need ripe mangos, red onion, jalapeños, cilantro and lime.
TIP: If you don’t want the heat from the jalapeños remove the seeds and the pith (the white part).
Combine the diced mango, onion, jalapeños, cilantro and squeeze the juice of 1/2 large lime in a small bowl. Cover and refrigerate for at least 30 minutes.
For the scallops I recommend a cast iron pan but you can use any larger frying pan. Depending on how many scallops you are cooking you may need to do them in batches. Do not over crowd the pan.
Season the scallops with sea salt and fresh cracked pepper, on both sides.
Add oil to the pan and get it very hot. Use an oil with a high smoke point, I use vegetable oil. When the pan is very hot, place the scallops in the pan starting at 12 o’clock and work your way clockwise (this way you will know the order you placed them in the pan and which ones have been cooking the longest).
Let the scallops cook 2-3 minutes until you begin to see a brown crust on the edge, then flip and continue cooking another 2-3 minutes.
Once the second side is browned, remove from heat and place on plate lined with paper towel. Transfer to a serving dish, add mango salsa, and serve immediately. I hope you enjoy this seared scallops with mango salsa recipe.
Mango Salsa
Equipment

Ingredients
- 1/2 lime
- 1/4 cup cilantro, roughly chopped
- 1/4 cup red onion, finely diced
- 2 medium jalapeños, finely diced
- 2 mangos, diced
Instructions
- Dice the red onion, jalapeños and mangos
- Roughly chop the cilantro
- Combine all ingredients in a small bowl
- Squeeze the juice of 1/2 lime in the bowl
- Mix well, cover and refrigerate for at least 30 minutes
Seared Scallops
Equipment
- Cast Iron Pan (or other large frying pan)
Ingredients
- 20 each Scallops
- 2 T Vegetable Oil
- Salt
- Pepper
Instructions
- Prepare the scallops by removing the muscle attachment if still there
- Add oil to pan and heat pan until very hot
- Add salt and pepper to both sides of the scallops
- Add scallops to pan and cook 3-4 minutes per side, until a golden crust is formed
- Remove scallops from pan to paper towel lined plate
- Place a bed of salsa on a plate and then add scallops
- Serve immediately
