Busy nights call for a Simple Slow Cooker Pot Roast. It’s easy to prepare in the morning before you are off to work or if you are short on time, prepare it the night before. It’s a great all-in-one meal, full of protein, carbs, and vegetables. Grab your favorite loaf of bread and this hearty meal is complete!
4 Steps to the perfect pot roast
- SEAR your roast. First, generously salt, pepper and lightly flour the roast. Add about 2-3 tablespoons of olive oil to the pan and sear on all sides. Searing your meat seals in the juices that will be released when cooking, adding a delicious flavor to your gravy.
- Add your favorite VEGETABLES. I like to use white potatoes, carrots, onions and celery. However, experiment with your favorite veggies and add in the ones you like best.
- SLOW COOK for several hours.
- Add CORNSTARCH at the end to thicken up your gravy.
Simple Slow Cooker Pot Roast-Ingredients
Olive oil, pepper, salt, beef broth, water, french onion soup, carrots, celery, beef chuck, onion, cream of mushroom soup, white potatoes, corn starch.
Instructions
Lightly flour, salt and pepper chuck roast.
In a large fry pan, add 2-3 tablespoons of olive oil over medium heat. Add the onions to the pan, browning them side down. Remove onions and set aside.
Place the chuck roast into the fry pan and sear it for about 1-2 minutes on all sides until it is a nice brown color. Remove the roast and place it into your slow cooker.
Use about a half cup of 1/2 cup of water to deglaze the pot. Use a wooden spoon to carefully scrape the bottom of the pan.
Pour over the roast.
In a mixing bowl, mix french onion soup, cream of mushroom soup and 1/2 can of water. Add peeled potatoes, onion, carrots and celery to the slow cooker.
Pour mixture over the roast and vegetables. Add fresh ground pepper.
Add one cup of beef broth to the slow cooker.
Cook on high for 5-6 hours or on low for 8-10 hours or until the roast and vegetables are tender. For the last hour, add corn starch, whisked together with a small amount of water (to thicken the gravy).
Pour into the slow cooker and stir.
Continue cooking. Once done serve and enjoy!

- 1 3-5 lb. chuck roast
- 2-3 tbsp flour
- fresh ground pepper and salt
- 2-3 tbsp olive oil
- 1 large onion peeled and halved
- 6-8 carrots peeled and cut into 2-3 inch pieces
- 6 medium white potatoes cubed
- 3-4 celery cut into 2-3 inch pieces
- 1 package french onion soup mix
- 1 can cream of mushroom soup
- 1/2 cup water
- 1 cup beef broth
- 1/3-1/2 cup corn starch for thickening
