Cottontail Cocktail

This creamy Cottontail Cocktail is perfect for Easter! A delicious whipped cream, coconut flavored cocktail, topped off with a cute tail!

Equipment

  • coup or martini glass
  • Cocktail Shaker

Ingredients
  

  • 1.5 oz whipped cream vodka
  • 2 oz coconut rum
  • 2 oz half and half
  • 1/2 oz cream of coconut
  • splash of pineapple juice
  • marshmallow topping, sweetened shredded coconut and marshmallow for the rim of the glass

Instructions
 

  • Add one teaspoon of marshmallow topping to a shallow dish. Rim the edge of a coup or martini glass with the marshmallow topping.
  • In another shallow dish, add sweetened coconut. Dip the rimed glass into the coconut.
  • Make a small cut in one marshmallow and place it on the edge of the glass.
  • In a cocktail shaker filled with ice, add whipped vodka, coconut rum, half and half, cream of coconut and pineapple juice.
  • Shake vigorously until very cold.
  • Strain into prepared coup or martini glass.
