Caprese Penne Pasta Salad

With Summer just around the corner, make this Caprese Penne Pasta Salad for your next cookout! It goes great with every main you grill up.

Ingredients
  

  • 8 oz penne pasta
  • 16 oz cherry tomatoes
  • 16 oz fresh mozzarella pearls
  • 1/2-1 cup fresh basil chopped

Dressing

  • 1/3 cup extra virgin olive oil
  • 3 tbsp lemon juice freshly squeezed
  • 1 shallot finely chopped
  • 1 garlic clove minced
  • 1 tbsp honey
  • 1 tsp salt
  • 1 zest of a lemon
  • 1/4 tsp pepper freshly ground

Instructions
 

  • Cook penne pasta according to package directions. Drain and rinse with cold water. Set aside.
  • Wash and cut tomatoes in half.
  • Add penne pasta, tomatoes, mozzarella pearls and half of the chopped basil to a large mixing bowl.
  • In a small bowl, whisk together the extra virgin olive oil, lemon juice, shallot, garlic, honey, salt, lemon zest and pepper.
  • Drizzle dressing over the pasta salad. Gently toss until all the ingredients are well coated.
  • Cover the bowl with plastic wrap and place it into the refrigerator for at least 30 minutes to allow all the flavors to come together.
  • Before serving, toss salad again and transfer to a serving bowl. Add fresh basil leaves to the top for a fresh, appealing look.
  • Serve and enjoy!
