Mascarpone Berry Bowl

Berry mixture
- 1/2 cup blueberries
- 1/2 cup raspberries
- 1 tbsp lemon juice fresh squeezed
- 1 tsp lemon zest
- 1 tbsp granulated sugar
Mascarpone mixture
- 8 oz mascarpone
- 2 tbsp heavy cream
- 3 tbsp granulated sugar
- 1 tsp pure vanilla extract
- 1 tsp lemon juice fresh squeezed
- fresh mint leaves for garnish
- cannoli chips, biscotti or butter cookies Pepperidge Farms Chessmen Butter Cookies, for serving
Mix the berries, lemon juice, lemon zest and sugar. Set aside.
Using a hand mixer, beat mascarpone, heavy cream, granulated sugar, pure vanilla extract, and lemon juice until light and fluffy.
Add mascarpone mixture to a piping bag fitted with a large star tip. Pipe mascarpone cheese in a circle, keeping a well in the middle. Divide it evenly among 4 bowls. If you do not have a piping bag, use a spoon and drop mascarpone evenly into 4 bowls. Use the back of the spoon and create a well in the middle of each.
Spoon the berry mixture into each well. Garnish with a sprig of mint.
Add a drizzle of juice to the top if desired.
Serve with cannoli chips, biscotti or shortbread cookies.
