Berry mixture

  • 1/2 cup blueberries
  • 1/2 cup raspberries
  • 1 tbsp lemon juice (fresh squeezed)
  • 1 tsp lemon zest
  • 1 tbsp granulated sugar

Mascarpone mixture

  • 8 oz mascarpone
  • 2 tbsp heavy cream
  • 3 tbsp granulated sugar
  • 1 tsp pure vanilla extract
  • 1 tsp lemon juice (fresh squeezed)
  • fresh mint leaves (for garnish)
  • cannoli chips, biscotti or butter cookies (Pepperidge Farms Chessmen Butter Cookies, for serving)

Mascarpone Berry Bowl-Instructions

  • Mix the berries, lemon juice, lemon zest and sugar. Set aside.
  • Using a hand mixer, beat mascarpone, heavy cream, granulated sugar, pure vanilla extract, and lemon juice until light and fluffy. 
  • Add mascarpone mixture to a piping bag fitted with a large star tip. Pipe mascarpone cheese in a circle, keeping a well in the middle. Divide it evenly among 4 bowls. If you do not have a piping bag, use a spoon and drop mascarpone evenly into 4 bowls. Use the back of the spoon and create a well in the middle of each. 
  • Spoon the berry mixture into each well. Garnish with a sprig of mint.
  • Add a drizzle of juice to the top if desired.
  • Serve with cannoli chips, biscotti or shortbread cookies.
