S'mores Magic Cookie Bars

These S'mores Magic Cookie Bars are bursting with gooey, chewy, marshmallow and chocolate goodness. The bottom layer consists of rich graham crackers plus a sweet sugar cookie on top. S'more please!

Ingredients
  

Graham Cracker Crust

  • 1 cup graham crackers
  • 2 tbsp sugar
  • 1/4 cup butter melted

Sugar Cookie Layer

  • 1/4 cup butter softened
  • 2 tbsp vegetable shortening
  • 1/2 cup sugar
  • 1 tsp pure vanilla extract
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 1/4 cup flour

Topping

  • 1 cup semi-sweet chocolate chips
  • 1/2 cup mini-chocolate chips
  • 1 1/2 cups mini-marshmallows
  • 1 can sweetened condensed milk

Instructions
 

Graham Cracker Crust

  • In a small stove top pan melt the butter.
  • Combine graham crackers, sugar and melted butter. Mix well.
  • Press into a 9x13 inch pan.

Sugar Cookie

  • In a stand mixer with a paddle attachment or a hand mixer, combine butter, vegetable shortening and sugar. Beat until light and fluffy.
  • Add egg and vanilla and beat until combined.
  • Mix together dry ingredients (flour, salt, and baking soda). Add to the mixing bowl and beat until a soft dough forms.
  • Using flowered hands, press the dough into the pan, spreading evenly.

Topping

  • Sprinkle, semi-sweet chocolate chips, mini-chips and mini-marshmallows over the dough.
  • Pour sweetened condensed milk over the top.
  • Bake for 25 minutes at 375 degrees. Edges and marshmallows should be golden brown.
  • Optional: Add some more marshmallows to the top. If you have a blow torch, gently toast the marshmallows.
