Iced Oatmeal Cookies

If you like oatmeal cookies then you've got try this recipe. This cookie is rich in flavor and texture, chewy in the middle with the perfect crunch on the edge. Ice this cookie with vanilla frosting and you will be sticking your hand more than once in the cookie jar!

Equipment

  • Large cookie sheet
  • Wire rack

  • Medium sized mixing bowl

Ingredients
  

  • 2 sticks salted butter, softened
  • 1/2 cup granulated sugar
  • 1 cup dark brown sugar
  • 2 large eggs
  • 1 1/4 tsp pure vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp cinnamon
  • 2 cups all-purpose flour
  • 2 cups old fashioned instant oats

Instructions
 

  • Preheat oven to 350 degrees
  • In a stand mixer with a paddle attachment beat the butter and granulated sugar until light and fluffy
  • Add dark brown sugar and beat
  • Add eggs one at at time and beat after each
  • Add pure vanilla extract
  • Add baking powder, baking soda, salt and cinnamon and beat until combined
  • Add flour and beat until combined
  • Add old fashioned instant oats and beat until combined
  • Using a cookie scoop, drop batter onto cookie sheet spacing two inches apart
  • Bake for 12-15 minute, or until edges become slightly brown
  • Let cool on baking sheet for 5 minutes
  • Move to wire rack and cool completely
  • Ice cookies with vanilla icing
