Iced Oatmeal Cookies

I am an extremely fussy baker! So when I try out a new recipe they better taste great on the first try or I check it off the list right away. The perfect cookie needs to be rich in flavor, chewy, and have the perfect cook on it or it’s not worth the calories! These cookies are perfect! Rich in flavor, chewy and perfectly cooked these iced oatmeal cookies do not disappoint!

These classic and simple iced oatmeal cookies are a close runner up to an all-time favorite, chocolate chip cookies. Complex in texture, rich and chewy and just plain good. If you want to try something different to bake, I recommend trying these cookies.

Iced Oatmeal Cookies Ingredients: flour, butter, dark brown sugar, granulated sugar, vanilla, baking powder, baking soda, salt, cinnamon, eggs and old-fashioned instant oats.

In a stand mixer using a paddle attachment beat butter and granulated sugar until light and fluffy.

Add dark brown sugar and beat.

Drop in eggs, one at a time, and beat.

Add pure vanilla extract and beat.

Add salt, baking soda and baking powder and beat until combined.

Don’t forget the cinnamon, beat until combined.

Add flour and beat until combined.

Add old-fashioned instant oats and beat until combined.

On a large cookie sheet, using a cookie scoop, drop cookies spacing about 2 inches apart. This is my preferred cookie sheet that I use all the time. It is aluminum with a textured pattern. The cookies do not stick and bake evenly.

Bake at 350 degrees for 10-12 minutes. Edges should be slightly brown.

Let cookies rest on the cookies sheet for a few minutes before moving to the wire rack. This helps the cookies to hold its shape better when removing.

Ingredients
  

  • 2 sticks salted butter, softened
  • 1/2 cup granulated sugar
  • 1 cup dark brown sugar
  • 2 large eggs
  • 1 1/4 tsp pure vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp cinnamon
  • 2 cups all-purpose flour
  • 2 cups old fashioned instant oats

Instructions
 

  • Preheat oven to 350 degrees
  • In a stand mixer with a paddle attachment beat the butter and granulated sugar until light and fluffy
  • Add dark brown sugar and beat
  • Add eggs one at at time and beat after each
  • Add pure vanilla extract
  • Add baking powder, baking soda, salt and cinnamon and beat until combined
  • Add flour and beat until combined
  • Add old fashioned instant oats and beat until combined
  • Using a cookie scoop, drop batter onto cookie sheet spacing two inches apart
  • Bake for 12-15 minute, or until edges become slightly brown
  • Let cool on baking sheet for 5 minutes
  • Move to wire rack and cool completely
  • Ice cookies with vanilla icing

Ingredients
  

  • 2 cups powdered sugar
  • 2 tbsp butter softened
  • 1/3 cup milk
  • 1 tsp pure vanilla extract

Instructions
 

  • Using a hand mixer, beat the softened butter until smooth
  • Add powdered sugar and milk and beat until smooth
  • Add vanilla and beat until combined
  • If too thick add a 1 tbsp. of milk at a time and beat until you get the right consistency
  • Ice cookies and let dry
  • Enjoy!

    Hi, I haven’t tried these yet. But the icing is missing an ingredient. It says to beat butter, however, butter is not listed in the icing ingredients. How much butter is supposed to be used?
