- 1/4 cup vegetable shortening
- 1/4 cup butter softened
- 3/4 cup granulated sugar
- 1 egg
- 3/4 tsp lemon extract
- 1 3/4 cups flour
- 3/4 tsp cream of tartar
- 3/4 tsp baking soda
- 1/4 tsp salt
Preheat oven to 350 degrees.
In a stand mixer with a paddle attachment or hand mixer, beat the vegetable shortening and butter.
Drop in egg, lemon extract and beat until combined.
Add flour, cream of tartar, baking soda and salt. Beat until a soft dough forms.
Using a cookie scoop or teaspoon, gather up dough, roll into 1 inch balls and place on a baking sheet about 3 inches apart.
Flatten with a fork, making a crisscross pattern.
Bake for 8-10 minutes. Remove from oven and let sit on cookie sheet for about 1 minute. Then move to a wire rack and cool completely.
Serve and enjoy!
To freeze, place in an airtight container with wax paper between layers. Freeze for up to 3 months.
