My mom has always loved lemon desserts! However, I never inherited her love for lemon, as I love CHOCOLATE desserts. But the other day, as the sun was shining, I got a desire to bake lemon cookies. Even this chocoholic approves of these little lemony treats! In addition, these cookies are simple to make!

Simple Lemon Crisscross Cookies-Ingredients

Salt, vegetable shortening, flour, sugar, baking soda, cream of tartar, butter, lemon extract, egg.

Instructions

Preheat oven to 350 degrees. In a stand mixer with a paddle attachment or hand mixer, beat the vegetable shortening and butter.

Drop in egg, lemon extract and beat until combined.

Add flour, cream of tartar, baking soda and salt.

Beat until a soft dough forms.

Using a cookie scoop or teaspoon, gather up dough, roll into 1 inch balls.

Place on a baking sheet about 3 inches apart.

Flatten with a fork, making a crisscross pattern.

Bake for 8-10 minutes. Remove from oven and let sit on cookie sheet for about 1 minute. Then move to a wire rack and cool completely.
