Easy Cheesy Mashed Potato Pancakes

These easy cheesy mashed potato pancakes are a great way to use leftover mashed potatoes and make a great breakfast treat or daytime snack.

Ingredients
  

  • 2 cups Leftover mashed potatoes
  • 1 cup Shredded cheese cheddar or whatever you like
  • 2 eggs
  • 1/4 cup flour
  • 1/3 cup green onions
  • 1 tsp garlic powder
  • 1 tsp parsley or thyme
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 Tbsp Olive oil

Instructions
 

  • In a large bowl add, mashed potatoes (room temperature), eggs, cheese, flour, green onions, thyme, garlic powder, salt and pepper.
  • Mix thoroughly until all ingredients are combined and mixture is smooth.
  • Heat olive oil in a large non-stick pan over medium heat.
  • Form approximately 6 patties from the mixture and place on the plate.
  • Fry the patties in the pan 4-5 minutes per side or until golden brown.
  • Serve immediately.
