Easy Cheesy Mashed Potato Pancakes
These easy cheesy mashed potato pancakes are a great way to use leftover mashed potatoes and make a great breakfast treat or daytime snack.

- 2 cups Leftover mashed potatoes
- 1 cup Shredded cheese cheddar or whatever you like
- 2 eggs
- 1/4 cup flour
- 1/3 cup green onions
- 1 tsp garlic powder
- 1 tsp parsley or thyme
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 Tbsp Olive oil
In a large bowl add, mashed potatoes (room temperature), eggs, cheese, flour, green onions, thyme, garlic powder, salt and pepper.
Mix thoroughly until all ingredients are combined and mixture is smooth.
Heat olive oil in a large non-stick pan over medium heat.
Form approximately 6 patties from the mixture and place on the plate.
Fry the patties in the pan 4-5 minutes per side or until golden brown.
Serve immediately.
