These easy cheesy mashed potato pancakes are a great way to use leftover mashed potatoes and make a great breakfast treat or daytime snack. Crispy on the outside and creamy on the inside.

Ever wonder what to do with leftover mashed potatoes? They are never quite the same the next day, and they always look lumpy and sad. Well, problem solved! This recipe is simple and quick! Plus, it’s a great way to use the left over mashed potatoes and other things that you have in the refrigerator.

Our kids love potatoes, pretty much anyway you can make them. Sometimes we have some leftover mashed potatoes and it seems that they always go to waste. However, the beauty of these potato pancakes is that you can use whatever left over things you have in the refrigerator. Ham, peppers, onions, herbs, all are perfect and can be used in this recipe. I specifically used green onions, but anything else can be substituted using approximately the same amount.

Easy Cheesy Mashed Potato-Instructions

In a large bowl, add the mashed potatoes, break up any large clumps. It is easier to work with the potatoes if they are room temperature and not just out of the refrigerator. I take them out to warm up while I prep the other ingredients.

Now throw everyone into the pool! Add the cheese, eggs, flour, onions, garlic powder, thyme, salt and pepper.

Mix thoroughly, until all the ingredients are incorporated and there is a smooth consistency.

Heat a non-stick pan over medium heat with the 2 tablespoons of oil.

Form the mixture into pancakes. I try to make them about the size of my palm. You should get between 6-8 depending on the size. You can always make them smaller if you need a few more. Set them on a plate until you have used up all the batter.

Now it’s time to fry them up! Add them to the pan, but make sure you are not crowding them in. If necessary you may need to do two batches.

Cook for 4-5 minutes until golden brown. Then flip and cook the other side for 4-5 minutes.

Serve immediately, with a little sour cream or just as is.

Ingredients
  

  • 2 cups Leftover mashed potatoes
  • 1 cup Shredded cheese cheddar or whatever you like
  • 2 eggs
  • 1/4 cup flour
  • 1/3 cup green onions
  • 1 tsp garlic powder
  • 1 tsp parsley or thyme
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 Tbsp Olive oil

Instructions
 

  • In a large bowl add, mashed potatoes (room temperature), eggs, cheese, flour, green onions, thyme, garlic powder, salt and pepper.
  • Mix thoroughly until all ingredients are combined and mixture is smooth.
  • Heat olive oil in a large non-stick pan over medium heat.
  • Form approximately 6 patties from the mixture and place on the plate.
  • Fry the patties in the pan 4-5 minutes per side or until golden brown.
  • Serve immediately.
