Simple Kentucky Derby Pie

This decadent pie is a true winner! This Simple Kentucky Derby Pie is a delicious combination of pecan pie meets chocolate chip pie. In addition, it has become the traditional dessert to eat during the derby!

Equipment

  • Stand mixer with paddle attachment or hand mixer

Ingredients
  

  • 1/2 cup butter melted and cooled
  • 2 eggs
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 1/2 tsp pure vanilla extract
  • 1/2 cup pecans chopped
  • 1/2 cup flour
  • 1/2 tsp salt
  • 1 cup semi-sweet chocolate chips
  • 1 9-inch pie shell unbaked

Instructions
 

  • Preheat oven to 350 degrees.
  • In a small sauce pan, melt butter. Let cool.
  • Using a stand mixer with a paddle attachment or a hand mixer, add eggs, sugar, brown sugar, vanilla, butter (cooled) and beat until combined.
  • Add flour, salt and pecans. Beat until combined.
  • Stir in chocolate chips.
  • Pour into an unbaked 9-inch pie shell.
  • Bake for 45-50 minutes. If the pie is browning too quickly place a piece of tin foil over the top of the pie.
  • Remove and let cool.
  • Serve at room temperature. If desired add a scoop of your favorite ice cream!
