Air Fryer Cookie Dough Egg Rolls
So simple to make, these Air Fryer Cookie Dough Egg Rolls are a show stopper! Served with chocolate sauce and ice cream!
Equipment
- Stand mixer with paddle attachment or hand mixer
- Air Fryer
- wire cooling rack
Ingredients
- 1/4 cup butter softened
- 1/4 cup vegetable shortening Crisco
- 1/4 cup granulated sugar
- 1/2 cup dark brown sugar
- 1 tsp pure vanilla extract
- 1 1/4 cup flour
- 1/2 tsp salt
- 3 tbsp milk
- 1 cup mini semi-sweet chocolate chips
- 6-8 egg roll wrappers
- 1 tbsp water
- olive oil spray
Instructions
- Preheat air fryer to 350 degrees.
- In a stand mixer with a paddle attachment or hand mixer beat butter until creamy. Add vegetable shortening and beat until combined.
- Add granulated sugar, dark brown sugar and pure vanilla extract and beat until light and fluffy.
- Add flour, salt and milk and beat until a dough forms. Drop in the chocolate chips and beat until combined.
- Position the egg roll wrappers on a flat clean surface in a diamond. Add about 2 tablespoons of cookie dough to the center of each wrapper.
- Brush edges with water. Roll the bottom corner over the dough, fold in the sides. Wet the top corner with a little water and roll it up.
- Repeat with the remaining dough and wrappers.
- Place egg rolls in the bottom tray of the air fryer, making sure not to crowd them. Lightly spay olive oil on the tops and sides of the egg rolls. Cook for 3.5-4 minutes and flip halfway through. Lightly spray the tops after they are flipped. Continue to bake for an additional 3.5-4 minutes or until golden brown. About 7-8 minutes total.
- Remove egg rolls from the air fryer and move to a wire rack. Let cool.
- Once cooled, but still warm, sprinkle powdered sugar over the top. Serve with chocolate dipping sauce, vanilla ice cream and whipped cream.
