Ingredients
  

  • 2 lbs Fresh Flounder Fillets
  • 2 pints tomatoes grape or cherry
  • 6 cloves garlic minced
  • 3 tbsp olive oil
  • 1 tbsp fresh lemon juice
  • 4 tbsp fresh basil thinly cut
  • 1 tsp salt
  • 1/2 tsp ground pepper

Instructions
 

  • Preheat oven to 425 degrees ℉.
  • Wash tomatoes and cut in half or quarters depending on size.
  • In a mixing bowl, add tomatoes, garlic, basil, olive oil, lemon juice, salt and pepper and mix thoroughly.
  • Place tomato mixture evenly into bake dish and bake for 5 minutes.
  • Season flounder with salt and pepper and place over the tomato mixture.
  • Bake for an additional 15 minutes or until opaque and flakes easily.
  • Remove from oven and serve immediately.
