- 2 lbs Fresh Flounder Fillets
- 2 pints tomatoes grape or cherry
- 6 cloves garlic minced
- 3 tbsp olive oil
- 1 tbsp fresh lemon juice
- 4 tbsp fresh basil thinly cut
- 1 tsp salt
- 1/2 tsp ground pepper
Preheat oven to 425 degrees ℉.
Wash tomatoes and cut in half or quarters depending on size.
In a mixing bowl, add tomatoes, garlic, basil, olive oil, lemon juice, salt and pepper and mix thoroughly.
Place tomato mixture evenly into bake dish and bake for 5 minutes.
Season flounder with salt and pepper and place over the tomato mixture.
Bake for an additional 15 minutes or until opaque and flakes easily.
Remove from oven and serve immediately.
