Preheat air fryer to 375℉ or 390℉ (for extra crispy).
In a mixing bowl, add chicken, buttermilk and hot sauce. Refrigerate for 1 hour to marinate.
Add flour, cornstarch, salt, pepper and Old Bay seasoning to a mixing bowl. Whisk to combine.
Using tongs, pick up one piece of chicken at a time and dip into the flour mixture. Coat both sides evenly.
Generously spray the air fryer basket. Working in batches, place the chicken in a single layer, making sure not to crowd.
Spray the chicken with the olive oil spray, making sure to coat evenly.
Air fry the chicken for 25 minutes, flipping halfway through. Once the chicken is flipped, spray again with the olive oil spay, making sure to coat the other side evenly. Cook for the remainder of the time.
Chicken is done once the internal temperature reaches 165-175℉ and the chicken is crispy and golden brown. Repeat until all the chicken is done.
