Delicious Stuffed Peppers
These Simple Stuffed Peppers are easy to whip up and make a great main or side dish. Just stuff, bake and enjoy!

Mixing Bowl
- 3 bell peppers cut in half and seeded
- 4 hard boiled eggs diced
- 4 cups bread crumbs
- 1 cup parmesan cheese
- 1/2 tsp pepper
- 1 tsp garlic powder
- 1 tsp salt
- 1/4 cup fresh parsley chopped
- 1/2 cup olive oil
- 1/2 cup mozzarella cheese grated
Preheat the oven to 400 ℉.
Wash, dry and cut peppers in half. Take out the stem and seeds.
In a mixing bowl combine eggs, bread crumbs, parmesan cheese, pepper, garlic powder, salt, parsley and olive oil.
Fill each pepper half with the filling and place in a baking dish. Cover with aluminum foil.
Bake for 45 minutes. Remove foil, sprinkle mozzarella cheese over the filling and bake for an additional 10 minutes. Cheese should be bubbly and melted.
Remove from oven.
Serve and enjoy!
