Delicious Stuffed Peppers

These Simple Stuffed Peppers are easy to whip up and make a great main or side dish. Just stuff, bake and enjoy!

Ingredients
  

  • 3 bell peppers cut in half and seeded
  • 4 hard boiled eggs diced
  • 4 cups bread crumbs
  • 1 cup parmesan cheese
  • 1/2 tsp pepper
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/4 cup fresh parsley chopped
  • 1/2 cup olive oil
  • 1/2 cup mozzarella cheese grated

Instructions
 

  • Preheat the oven to 400 ℉.
  • Wash, dry and cut peppers in half. Take out the stem and seeds.
  • In a mixing bowl combine eggs, bread crumbs, parmesan cheese, pepper, garlic powder, salt, parsley and olive oil.
  • Fill each pepper half with the filling and place in a baking dish. Cover with aluminum foil.
  • Bake for 45 minutes. Remove foil, sprinkle mozzarella cheese over the filling and bake for an additional 10 minutes. Cheese should be bubbly and melted.
  • Remove from oven.
  • Serve and enjoy!
