Easter M&M Oatmeal Cookies
Easter M&M Oatmeal Cookies are fun, bright and festive. A chewy oatmeal cookie loaded with colorful M&Ms make them a perfect treat!

- 1 cup butter softened
- 1 cup dark brown sugar
- ½ cup white sugar
- 2 eggs
- 1½ tsp pure vanilla extract
- 1½ cups flour
- 1 tsp baking soda
- 1 tsp salt
- 3 cups quick oats
- 1 bag M&Ms Easter, pastel
Preheat oven to 350℉.
Line a baking sheet with parchment paper or use a Doughmakers baking sheet.
Whisk together flour, baking soda, and salt. Set aside.
Using a stand mixer with a paddle attachment, combine butter and sugars until light and fluffy.
Drop in eggs, one at a time beating well after each addition. Pour in pure vanilla extract and combine.
Add flour mixture and beat until combined. Scrape down the sides with a spatula if necessary.
Add oats and beat until just combined. Fold in 1 cup of M&Ms.
Gather up 1 tablespoon of dough and roll into a ball. Place onto the prepared baking sheet about 2 inches apart. Press in more M&Ms if desired.
Bake for 10-12 minutes or until the edges turn golden brown while the centers remain soft.
Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
Enjoy warm or store for later!
To store, put cookies in an airtight container placing wax paper between layers for 3-5 days. To freeze, put cookies in an airtight container placing wax paper between layers for up to 3 months.
