Ingredients
  

  • 11 oz can Shoepeg corn Green Giant
  • 15 oz can black beans
  • 6 oz feta cheese
  • 1/4 cup scallions
  • 1/4 cup apple cider vinegar
  • 1/4 cup extra virgin olive oil or vegetable oil
  • 1/8 cup sugar

Instructions
 

  • Drain corn and strain and rinse black beans to remove any excess brine or liquid.
  • Finely slice scallions.
  • Add corn, black beans, feta cheese, and scallions to a mixing bowl.
  • In a small bowl, whisk together apple cider vinegar, oil and sugar until combined.
  • Pour over corn and black beans. Mix until thoroughly combined.
  • Chill for 30 minutes, allowing all the flavors come together.
  • Serve with your tortilla chips, crackers, pita chips or vegetable sticks. You can also serve it as a side dish to go along with your favorite main. 
  • Enjoy!
  • Cover leftovers and place in the refrigerator for up to 5 days.
