Easy Corn and Black Bean Dip

- 11 oz can Shoepeg corn Green Giant
- 15 oz can black beans
- 6 oz feta cheese
- 1/4 cup scallions
- 1/4 cup apple cider vinegar
- 1/4 cup extra virgin olive oil or vegetable oil
- 1/8 cup sugar
Drain corn and strain and rinse black beans to remove any excess brine or liquid.
Finely slice scallions.
Add corn, black beans, feta cheese, and scallions to a mixing bowl.
In a small bowl, whisk together apple cider vinegar, oil and sugar until combined.
Pour over corn and black beans. Mix until thoroughly combined.
Chill for 30 minutes, allowing all the flavors come together.
Serve with your tortilla chips, crackers, pita chips or vegetable sticks. You can also serve it as a side dish to go along with your favorite main.
