Grilled Bruschetta
This Grilled Bruschetta is made with fresh basil and yellow and red grape tomatoes. An easy appetizer that's great for summer or any time of the year!

- 6 tbsp butter melted
- 1 loaf French baguette cut into 1/4 inch pieces
- 4 tbsp olive oil
- 6 cloves garlic minced
- 1 pint yellow grape tomatoes halved lengthwise, then cut in half
- 1 pint red grape tomatoes halved lengthwise, then cut in half
- 12 leaves fresh basil chiffonade
- 1 tsp salt
- 1/2 tsp pepper
Heat grill to medium heat.
In a small sauce pan, melt the butter.
Slice bread into ¼ inch slices on the bias.
Lightly brush butter onto both sided of each slice of of bread.
Grill each slice of bread for 2-3 minutes, until lightly charred. Flip and repeat.
Place toasted bread on a baking sheet.
In a small skillet, heat the olive oil over medium heat.
Add the garlic and saute for 2-3 minutes until just golden. Remove from heat and set aside to cool.
Wash the tomatoes and cut in half lengthwise and then in half again.
Chiffonade the basil.
Add tomatoes, basil, garlic and oil mixture, salt and pepper to a mixing bowl. Mix until combined.
Spoon a generous amount of tomato mixture onto each slice of bread. Drizzle with balsamic glaze.
Serve and enjoy!
