Piña Colada Whipped Topping
- 8 oz frozen whipped topping thawed
- 1 tsp lemon zest
- 1 tsp coconut extract
Toasted Coconut
- 1/2 cup sweetened shredded coconut toasted
Grilled Pineapple
- 1 pineapple cut into ½ rounds
- 3 tbsp butter
- 1 tsp cinnamon
Piña Colada Whipped Topping
In bowl, combine whipped topping, lemon zest and coconut extract and mix until combined.
Cover and place in the freezer until ready to serve.
Toasting the Coconut
Place coconut on a baking sheet, spreading it out evenly.
Broil for 2-3 minutes, until the coconut is golden brown. Use a spatula and toss to get an even toast.
Grilling the Pineapple
Preheat grill to medium heat, 400℉.
In a sauce pan, melt the butter and stir in cinnamon. Remove from heat and set aside.
Peel and core the pineapple and cut into ½ inch rounds.
Brush each side of the pineapple slices with the butter/cinnamon mixture.
Clean grill grates and brush with oil.
Place the pineapple slices on the grill. Grill each side for 5 minutes.
Remove the slices from the grill and place on dessert plate.
Top with whipped topping and sprinkle with toasted coconut.
Serve and enjoy!
