Spinach Feta Pinwheels

- 1 package spinach 10 oz, frozen, drained and squeezed
- 1 sheet puff pastry thawed
- 1 egg
- 1 tbsp milk
- 3/4 cup feta crumbled
- 1/2 cup mozzarella shredded
- 1 green onion chopped
- 1/2 tsp garlic salt
- 1/8 tsp fresh ground pepper
Preheat oven to 400℉.
Line the baking sheet with parchment paper and set aside.
Thaw, drain and squeeze excess water from the frozen spinach.
Thaw puff pastry according to package directions. Gently roll out the puff pastry on a lightly floured board to combine the seams.
In a small bowl whisk together the egg and milk. Brush the egg wash over puff pastry.
Combine feta, mozzarella, onion, garlic salt and pepper. Spread mixture evenly over the puff pastry and then top with spinach.
Starting with the short side, roll up the pastry into a log.
Slice the log into ½-¾ inch slices and place them onto the prepared backing sheet.
Brush the slices with the egg wash.
Bake for 18-20 minutes or until they are golden brown and puffed.
