Warm Pimento Cheese Dip

Ingredients
  

  • 8 oz cream cheese softened
  • 1/2 cup sour cream
  • 1 tbsp lemon juice freshly squeezed
  • 1/2 jar pimentos/red roasted peppers 10 oz jar, diced
  • 1 1/2 cups extra sharp cheddar cheese shredded
  • 1 1/2 cups pepper jack cheese shredded
  • 1 scallion sliced thin
  • salt and pepper to taste
  • crackers, pita chips, sliced veggies, etc. for dipping

Instructions
 

  • Heat oven to 425 degrees.
  • Drain and dice pimentos. Set aside.
  • Using a hand mixer, beat the cream cheese until smooth.
  • Add in sour cream, lemon juice, salt and pepper and beat until combined.
  • Fold in cheddar cheese, pepper jack cheese, scallions and pimentos.
  • Transfer to a shallow baking dish.
  • Bake for 15-20 minutes, or until bubbling and lightly golden brown.
  • Serve warm with crackers, pita chips, veggie sticks, etc.
  • Enjoy!
