There is nothing better than freshly made, warm muffins. Anytime I have a few bananas on hand, I make these muffins. These banana muffins are so quick and easy to make I’ve been able to make them before my kids head off to school.
Banana Muffins Ingredients: vegetable shortening, bananas, salt, baking soda, baking powder, vanilla, water, sugar, egg and flour.
Using a hand mixer, in a large bowl beat the vegetable shortening with sugar until light and fluffy.
Add water, vanilla and egg and beat.
Mash the bananas, add to the bowl and beat.
Add flour, baking soda, baking powder and salt and beat until just combined.
Line a muffin pan with paper liners. Fill liners 3/4 way full with batter.
Sprinkle sugar on the top.
Bake at 350 degrees for 17-20 minutes or until a toothpick comes out clean. Let cool for 5-10 minutes.

- 1/3 cup vegetable shortening
- 2/3 cup granulated sugar
- 2 tsp water
- 1 tsp vanilla
- 1 egg
- 1 cup mashed bananas
- 1 1/3 cup flour
- 2/3 tsp baking powder
- 2/3 tsp baking soda
- 2/3 tsp salt
Instructions
- Preheat oven to 350 degrees
- In large mixing bowl, beat vegetable shortening and sugar
- Add water, vanilla, and egg and beat
- Mash bananas with a fork and add to bowl and beat until combined
- Add flour, baking powder, baking soda, and salt and beat until combined
- Line a muffin pan with paper liners
- Fill liners 3/4 way full
- Sprinkle sugar on the top
- Bake for 17-20 minutes or until a toothpick comes out clean
- Let cool for 5-10 minutes
