Our family loves egg rolls. It is the top request when planning a game day spread. These Buffalo Chicken Egg Rolls are the perfect combo of spicy, crunchy and gooey.
How do I make Buffalo Chicken Egg Rolls in Air Fryer?
To save time, I prefer to use rotisserie chicken because it’s already cooked. You can cook any chicken pieces to use. It takes about 3/4 lb. of chicken to get the 2 cups needed for the recipe. You can even used canned chicken if desired.
In a large mixing bowl add cream cheese, cheddar cheese, blue cheese crumbles and Buffalo sauce and mix well. Use a hand mixer, if you have one to save time. Add shredded chicken and green onions and mix until combined.
Fill each egg roll wrapper, fold, roll and seal each egg roll into a tight little package. Add the prepared egg rolls to the preheated air fryer basket, spray the tops of the egg rolls with olive oil spray and bake for about 10 minutes or until golden brown. Let cool first because they are really hot right out of the air fryer, then serve with a side of your favorite sauce. Enjoy!
What sauce should I serve with these Buffalo Chicken Egg Rolls?
My favorite is blue cheese dressing, but other alternatives include; ranch dressing, chunky blue cheese dressing, sour cream and hot sauce. Really, whatever you like can be used as a dipping sauce or if preferred, just eat them plain!
Can I freeze Buffalo Chicken Egg Rolls?
Yes, these are great to make ahead and freeze prior to cooking. Once you have assembled the egg rolls, place them on a baking sheet lined with wax paper, non-stick aluminum foil or parchment paper. Place in the freezer for about 1 hour. Once frozen place the egg rolls in a plastic freezer bag. These will keep for up to 3 months in the freezer. To cook frozen egg rolls, add 2 minutes to the cooking time.

- 2 green onions (chopped)
- 1/2 cup Buffalo wing sauce

- Lay egg roll wrapper in a diamond shape.
- Add 2 tablespoons of chicken mixture.
- Fold bottom corner up.
- Fold in sides.
- Dampen top corner with warm water, close top and seal egg roll.
- Repeat to make 12 egg rolls.
- Preheat air fryer to 370 degrees.
- Spray air fryer basket with olive oil spray and place egg rolls in the basket making sure not to crowd.
- Spray the tops of the egg rolls and fry for 10 minutes or until golden brown.
- Let cool for 2 minutes.
- Serve and enjoy!
