To me, there is really nothing better than fresh out of the oven, homemade treats. In fact, that’s when I indulge most. Cookies are my favorite treat to make. Probably because I have mastered whipping up a batch very quickly. Chocolate chip cookies are my all time favorite. However, I really enjoy experimenting and making all kinds. Today, I was in the mood to make double chocolate chip cookies.
These double chocolate chip cookies are similar to my sensational chocolate chip cookies. Both use 1/2 salted butter and 1/2 vegetable shortening my go-to combination, especially for cookies. I think I may have nailed this recipe on my first try! (I’m on my fifth version of a recipe I hope to post soon…) These cookies came out perfectly rich, chocolaty, chewy, gooey and delicious!
As I have mentioned in previous posts, I love chocolate. In fact, I love chocolate so much that it is usually my go to when I am looking to bake something. Did you know that chocolate is the most popular sweet treat in the world? According to the World Cocoa Foundation, more than 3 million tons of cocoa beans are consumed around the world yearly. Not surprisingly, Europe and the United States consume the majority. That’s a lot of chocolate! Chocolate may even may be linked to health benefits!

Did you know that several studies have shown that chocolate may have the following health benefits? Good for the heart, the brain, and your mood.
Chocolate May be Good for the Heart: Several studies have shown that there is some correlation between chocolate consumption and reduced risk of heart problems. This could be in part, due to the fact, that cacao beans are full of phytonutrients, which act as antioxidants (oxidation inhibitors), that are high in iron, copper, magnesium, zinc and phosphorus.
Chocolate May be Good for the Brain: Chocolate may improve cognitive function according to the Journal of Alzheimer’s Disease. A study conducted by this journal found that chocolate consumption may reduce the risk of cognitive decline in older adults. On average, one chocolate snack per week, decreased their risk of cognitive decline by 40 percent over two years.
Chocolate May be Good for Your Mood: According to the Dartmouth Undergraduate Journal of Science, chocolate contains substances that stimulate the brain that may positively enhance mood.

Double Chocolate Chip Cookies-Ingredients
Chocolate chips, packed brown sugar, butter, vegetable shortening, vanilla, baking soda, salt, sugar, eggs, unsweetened cocoa, flour.
Double Chocolate Chip Cookies-Instructions
Using a stand mixer with the paddle attachment, mix the butter and vegetable shortening
Add the granulated sugar and beat
Next, packed brown sugar. Beat until light and fluffy.
Pour in the vanilla and beat.
Scrape down the sides…
Drop eggs in and beat until combined.
Mix the dry ingredients; flour, baking soda, salt and unsweetened cocoa, add and beat.
Stir in chocolate chips.
Using a cookie scoop or a spoon, drop onto an uncreased cookie sheet.
Bake at 350 degrees for 10-12 minutes. Let cookies cool on cookie sheet for 1-2 minutes before transferring them to a wire rack.
Rich, chocolatey, chewy and gooey!
Tip: Lightly push in a few more chips on the tops before moving to the wire rack.

Equipment
- Stand Mixer
- Cookie Sheet
- Wire rack
- Cookie Scoop
Ingredients
- 1/4 cup salted butter, softened
- 1/4 cup vegetable shortening
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 2 eggs
- 3/4 tsp vanilla
- 1/4 cup unsweetened cocoa
- 1 3/4 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 1/2 cups semi-sweet chocolate chips
Instructions
- Preheat oven to 350 degrees
- Using a stand mixer with a paddle attachment, beat the butter and vegetable shortening
- Add granulated sugar and beat
- Add packed brown sugar and beat
- Pour in vanilla and beat
- Drop in eggs, one at a time, beating after each, wipe down sides
- Put all dry ingredients together (flour, baking soda, salt) and add to mixing bowl, beat until combined
- Stir in chocolate chips
- Using a cookie scoop or spoon, drop scoops onto cookie sheet 3 inches apart
- Bake at 350 degrees for 10-12 minutes
- Let cool for 1-2 minutes on cookie sheet before moving to wire rack
- Cool completely
