Eggs, bacon and cheese! What’s not to love about this Easy Bacon and Cheese Quiche? I remember having quiche as a kid, but it was only on special occasions, so I thought it must be difficult to make. Boy was I wrong about that!
This quiche is simple to make, can be made ahead of time and it excellent as a leftover. Not every dish is good the next day, but I think when it comes to quiche, the next day could even be better!
Although quiche is largely considered a classic of French cuisine, its origins are from Germany, in the medieval kingdom of Lothringen, and which the French later renamed Lorraine. The word ‘quiche’ is from the German ‘Kuchen’, meaning cake. Who would have thought?
Quiche became popular in the United States in the 1950’s. Today you can find many variations of quiche with all sorts of ingredients. In addition, it can be served for breakfast, lunch, dinner or just a snack.
Let’s talk cheese. In this recipe I used cheddar cheese and parmesan cheese. However, you can use whatever kind you like, as long as it’s a good melting cheese. Gruyere, Colby, goat cheese, mozzarella, Swiss & jack cheeses will all work great. Mix it up and use what you like!

Easy Bacon and Cheese Quiche-Ingredients
- 4 eggs, lightly beaten
- 1 cup half & half
- 8 oz bacon cooked & crumbled
- 1 cup cheddar cheese
- 1/4 cup parmesan cheese
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 single pie crust
Instructions
- Preheat oven to 350 degrees.
- Fry bacon in a pan and crumble into small pieces.
- In a mixing bowl whisk together eggs, half & half, salt & pepper.
- Spread bacon and cheeses in the pie crust evenly.
- Pour the egg mixture over the top of the bacon and cheeses.
- Bake for 40 minutes or until a knife inserted in the center comes out clean.
- Let stand for 5-10 minutes.
- Serve and enjoy!
- Cover leftovers and refrigerate for up to 3 days.
