Short on time? Need a quick appetizer or side that goes with everything? Then these Easy Loaded Potato Rounds are your answer! Baked potatoes can take too long sometimes. The other day I was short on time, so I decided to cut the potatoes into rounds and grill them. Added a little cheese, bacon and sour cream to the top and wow! A delicious side or super fun appetizer.

Easy Loaded Potato-Instructions
Start off by washing your potatoes. I use baking potatoes. Plan on one medium potato per person (if serving as a side). A medium potato will get about 6 rounds.
Slice the potato into about 1/2 inch thick rounds. You can go thinner or thicker, just try to make sure they are all about the same thickness. Cutting them the same size will ensure they will be done at the same time.
Now, sprinkle with salt and pepper.
Add some olive oil to the tops.
Prepare the grill, medium-high heat. Lay out the potato rounds and let cook for 5-7 minutes.
Next, flip and cook for another 5-7 minutes. Cooking time will vary depending on how thick the rounds are.
Once cooked, add some cheddar or other favorite cheese. Cook for 1-2 minutes longer to melt the cheese.
I topped these off with some sour cream and bacon, your classic potato skin combo. Try salsa, gaucamole, caramelized onions and/or sautéed mushrooms. Have fun with it and choose your favorite combo!

- 4 Medium Baking potatoes
- 8 oz Shredded Cheddar Cheese
- 4 Slices Crisp Bacon
Instructions
- Cut potatoes into 1/2 inch rounds.
- Coat with olive oil and season with salt and pepper.
- Place potatoes on grill at medium high heat for 5-7 minutes.
- Flip potatoes and cook for another 5-7 minutes.
- Add cheese and cook till melted (1-2 minutes).
- Remove potatoes from grill. Add sour cream and bacon.
- Serve and enjoy!
