This easy zucchini bread is a great way to incorporate fresh zucchini into your recipes. Easy, moist and delicious! It’s a great way to sneak those veggies into your kids diet!
Every summer when the zucchini started to hit the stores, my mom always made zucchini bread. My dad loved it! Within seconds of it coming out of the oven, he would cut himself a few pieces and happily eat it with his coffee. Relishing in this memory of him sitting at the kitchen table, reading the newspaper and eating this bread always brings a smile to my face!
With this in mind, I went to the grocery store. To my surprise, they were putting out some fresh zucchini. So I quickly bagged up a few and off I went, already smelling the fresh baked bread coming out of my oven.
When I got home, my daughter Emma asked me what I was going to bake today and I told her Gramma’s easy zucchini bread. Surprised, she told me that I must put chocolate chips in them. Although I love chocolate in just about everything, venturing from the traditional recipe wasn’t something I was totally on board with. However, after her very persuasive reasoning, I decided to give it a try. I would make one loaf without and one with chocolate chips, as this recipe is for two loaves anyway.
Even though I was a bit hesitant, this chocolate chip zucchini bread came out absolutely delicious! The added creaminess and richness from the chocolate gives this already easy zucchini bread a little extra something special! To my daughter’s delight, she basked in the glory of it being her idea, and made sure she reminded me all day.
Easy Zucchini Bread-Ingredients:
Zucchini, eggs, vanilla, salt, baking powder, baking soda, oil, sugar, cinnamon, flour.
Instructions:
1. Using vegetable shortening, grease and flour two bread pans.
2. In a large mixing bowl beat eggs, oil and vanilla.
3. Add sugar and beat until combined.
4. Pour in dry ingredients and beat until combined. Do not panic, this mixture will be very thick, that’s ok.
5. Stir in the grated zucchini. The moisture from the zucchini will help to loosen the mixture.
6. Pour mixture into your pan filling about 1/2 way full.
7. For the second pan, add 1 cup of chocolate chips to the remaining mixture and stir well. Pour into the pan and add another 1/4-1/2 cup to the top.
8. Bake at 350 degrees for 40-60 minutes or until a toothpick inserted directly in the center comes out clean.
9. Let bread cool, remove from pans and enjoy!

Easy Zucchini Bread
Equipment
- hand mixer
- 2 Bread Pans
- Large Mixing Bowl
Ingredients
- 3 eggs
- 1 cup vegetable oil
- 3 tsp pure vanilla extract
- 2 cups granulated sugar
- 3 cups flour
- 1 tsp salt
- 1/2 tsp baking powder
- 1 tsp baking soda
- 3 tsp cinnamon
- 2 cups grated zucchini
Instructions
- Preheat oven to 350 degrees.
- Grease and flour two bread pans.
- Grate 2-3 zucchini (2 cups) keep the skin on.
- Using a hand mixer, beat eggs, vanilla and oil.
- Add in sugar slowly and beat well.
- Mix dry ingredients together (flour, salt, baking soda, baking powder, cinnamon), add to mixing bowl and beat until combined (this will be very thick).
- Stir in grated zucchini.
- Pour 1/2 mixture in one pan filling 1/2 way full (repeat for the other pan).Optional: For chocolate chip zucchini bread-Add 1 cup of chocolate chips for the second pan. Sprinkle another 1/4-1/2 cup of chocolate chips on top.
- Bake for 40-60 minutes or until a toothpick inserted directly in the center comes out clean.
