Looking for something a little different than a standard baked potato? Look no further. These grilled parmesan potato wedges are a great alternative and can be ready in under 30 minutes from start to finish.

I plan on one potato per person and use standard baking potatoes. I just cut the potatoes into wedges and then boil them for 5 minutes, no longer. This reduces the time needed on the grill to about 10 minutes. If you boil too long you will end up with mushy wedges, trust me on this one.

I season the potatoes with salt, pepper, garlic powder and olive oil. If using a charcoal grill, make sure you have 2 zones (direct and indirect). If using a gas grill set it low. Make sure to clean the grates and rub them with oil. This simple step will make everything easier when grilling. Make it a habit, and do it every time you grill anything.

Lay the potato wedges out on the grill with space between them. Don’t go too far because you will need to rotate the potatoes from the direct heat side to the indirect side, to keep them from charring. Flip and move them every two-three minutes. You may need to experiment a little with your particular grill as grills tend to vary in temperature.

After 10 minutes check to see if they are done. Either taste one, my preferred method, or pierce one with a fork, it should go in with little resistance.

Once they are done place them in a bowl, sprinkle with parmesan and fresh parsley or cilantro, serve and enjoy. These grilled parmesan potato wedges are great on their own, no ketchup required. Ingredients
  

  • 6 Potatoes
  • 1/4 cup Parmesan Cheese (or more)
  • 1/4 cup Fresh Chopped Parsley (or other fresh herb)
  • 1 tbsp Kosher Salt (or more to taste)
  • 1 tsp Black Pepper
  • 1 tsp Garlic Powder
  • 2 tbsp Olive Oil (more is ok)

Instructions
 

  • Slice potatoes into wedges and boil for 5 minutes
  • Drain potatoes and place in bowl
  • Combine salt, pepper & garlic powder and sprinkle over wedges
  • Add olive oil and mix thoroughly
  • Grill wedges for 10 minutes turning every 2-3 minutes
  • Remove from grill, add parmesan cheese & fresh parsley
  • Serve immediately
