This is a simple recipe that is sure to impress. The key to grilled sesame tuna with soy glaze is high quality tuna. Since I recommend serving this rare you need to go for sushi grade tuna. Remember the longer you cook this the more it will taste like canned tuna, which is not what we are going for. This is a restaurant worthy dish you can pull off in minutes.
Start off by getting the grill going, high for gas grills and direct method for charcoal grills. You want the grill really hot.
Next for the soy glaze. In a small sauce pan combine 1 part sugar with 1 part low sodium soy sauce over low-medium heat. 1/3 cup of each will make enough for 4 servings. Stir to combine, not all the sugar will dissolve immediately but will as it heats up.
While the soy glaze is heating up, lets prep the tuna. Pat both sides of the tuna dry with a paper towel. Season both sides with sea salt & pepper, drizzle with olive oil, then cover with sesame seeds. That’s it! Don’t overthink this one.
When the soy glaze starts to bubble turn the heat down to low, it will begin to thicken and the simmering will give it a nice nutty flavor.
TIP: The longer you cook the soy glaze the thicker it will get, once you pull it off the heat (just before serving) it will thicken as it cools as well.
Now to the grill, this is going to happen fast so be ready. Place the tuna on the grill, close the lid and wait 1 minute. You may hear some of the sesame seeds popping, this is normal. After 1 minute flip the tuna, close the lid and wait 1 minute. Remove the tuna from the grill to a platter. Slice thinly across the grain, drizzle with the soy glaze and you are done.
TIP: If you don’t want to put the soy glaze right on the tuna, pour it into small cups or bowls for each person so they can add as needed.

Ingredients
- 24 oz Tuna (Sushi grade)
- 1/3 cup Low Sodium Soy Sauce
- 1/3 cup Sugar
- 1/4 cup Sesame Seeds
- Sea Salt (Kosher salt can be substituted)
- Black Pepper
- 2 Tbsp Olive Oil
Instructions
- Heat the grill to high heat or for direct grilling method
- In a small sauce pan combine soy sauce and sugar and heat of medium low heat
- Once sauce begins to simmer turn to low and stir occasionally
- Season both sides of the tuna with salt, pepper and olive oil
- Sprinkle sesame seeds on tuna to cover
- Place tuna on grill for 1 minute
- Turn tuna and grill for 1 more minute
- Remove tuna from grill
- Slice tuna into thin strips against the grain
- Remove soy glaze from heat and place in small bowls or drizzle over tuna and serve
